For a couple of weeks I've been sick and lost a couple of day's was out of commission with cough syrup that put me to sleep. But I drive to Santa Barbara to bake cookies.
Nate and I have found that we are bumping into each other and sometimes need to wait for one or the other to finish up so that the one waiting can work.
The kitchen that Nate rents looks like a small old house. The current owners are two women who have turned the building into a cake bakery. When one enters into the building you enter into a long room that has a couch in it with a small table. A work metal table is along the far wall where we usually package our cookies.
A larger is to the left in the rear of that long room, which has shelves along one wall and another metal work table along the other. Nate usually makes his almond butter on that table and we make the meal/flour there as well.
In the center is a doorway into the kitchen. One sink is directly in front of the door and another is along the left wall. To the left, on one side are 2 sets of ovens stacked and another metal work table across from the ovens. I usually make my cookies on that metal table.
Nate was processing 100#/week of almonds initially and now is up to 400#/week. We are outgrowing the kitchen and working together.
