After writing the last blog I ate a cookie on Monday, to me they were too dry. I talked to Nate and he thought that they were dry on Sunday already. By Tuesday the cookies were dry and crunchy. I quickly checked on-line and found that I’d likely baked them too long, plus the cookies had sat on the cooling racks for much longer than at home..
As soon as Dale returned from his day job we went to Santa Barbara, straight to the kitchen. We had the neighbor girl, Lauren Silva, Sunny and Elias with us and we set up an assembly line. Lauren was mixing the ingredients while Sunny and Elias put the dough on the sheets. We had more air between the cookie sheets coming out of the oven and kept them in a cooler place. What a difference that made. I had ½ sheet bake for 11 minutes and ½ sheet bake for 10 minutes. We took the cookies to Nate’s then for desert tested the two, deciding that 11 minutes was probably a better time. Then back to the kitchen to bake mega batches for the farmer’s market. I’m really anxious to see how they go over.
Next on the agenda is to find some environmentally friendly clear packaging and get the labels made for Sunday’s market. I also need a name but haven’t really found anything I like. Too many Christine’s Kitchens.c
