Today I finally smoked the almonds I'd been thinking about. First I must describe the smoker: it is a commercial smoker which stands about 4' high. There is room for about 6 racks inside with the smoker box at the bottom. The box holds small pieces of wood in it which heat up and fill the smoker with the smoke.
My son's brother-in-law made boxes out of metal mesh to hold the almonds when they are smoking, hence the almonds cannot fall out but smoke can travel between the almonds.
So today I made up 3 trays of almonds then transferred the almonds into metal bowls. In one I poured a mixture of Tequila and Lime; in another I poured white Chardonnay wine; in another I poured a red wine. I let the almonds set in their alcohol for about 1/2 hour stirring frequently as I did not want for the skins to start peeling or the nuts to become too soft.
After setting in the alcohol I put the nuts on individual racks and put them into the oven.
The nuts are actually good but I'll need to have other people try these and see what they think.
