Smoking almonds part 2

Nate asked me to please smoke more almonds, there is a demand for them and he is looking to put out new fresh products. I'd smoked almonds before but it has been a couple of months so this was starting all over again as I did not write down any instructions.
For the last two days I've sorted and smoked almonds but all new and improved. First I smoked 4 trays of plain almonds and gave them to Nate on Tues. I then smoked another 4 trays of plain on Thurs. night. These did not smoke well at all so I gave it some thought. I knew that the wood chips had already been used and although the wood was charcoal by then realized that it would not smoke anymore. I put new wood in and presto magic there was smoke.
Nate had suggested that I also make some flavored almonds and suggested salt & pepper. I remembered that another vendor from Santa Clarita had suggested a lime flavor so Elias and I went off to find lime juice.
I soaked the almonds in lime juice, then put them in the smoker. 1/2 tray was salted and 1/2 unsalted. The made a tray of almonds with seasoned salt, onion powder and sugar, a tray with Tony Catchers cajun spice and a tray with salt and fresh ground pepper.
I'll write more about these almonds in the next day and and add some photos and recipes.
For now I'd taken a break from the computer and phone so unfortunately didn't get these things written about in a timely manner.
